CLEAN Greek-Style Shrimp and Orzo Salad



Ingredients
1 ounce orzo pasta, dry
1 teaspoon lemon juice
1 teaspoon red wine vinegar
1/8 teaspoon black pepper
1/4 teaspoon oregano, dried
3/4 teaspoon olive oil, extra virgin
2 tablespoons green onion, chopped
6 tomatoes, cherry
1/3 cucumber
3 ounces shrimp (US or Canada), cooked
5 olives, black
1 ounce feta cheese, low-fat


Preparation
Cook orzo according to package directions; drain and set aside.
In a medium bowl, whisk together the lemon juice, vinegar, pepper, oregano and oil.
Chop onion; halve tomatoes; and peel and dice cucumber.
Toss all ingredients together. Serve warm or at room temperature.
Enjoy with a calorie free beverage.
